There is a "high" season and a "low" season for airfares when traveling to Paris or when going to Italy.   It does not necessarily match high/low season for touring however.

In Paris and Italy, the high season months are going to be May, June, July, September and October.   As you can probably guess, that is a high time for airfares.   However, it is low season in August because most Europeans are on vacation.  But it is not low season for airfares as you think it might be.  That's because since the Europeans are on vacation taking up all those valuable seats, it keeps fares high.

For airfares, low season is generally October 20 to May 20.   At that time, sales can be found that will knock about 20%-30% off peak airfare prices on major airlines.

One tip to grab a low airfare to Paris in the summer is fly seasonally operated XL Airways (www.xl.com).  I find the service to be good, they have modern planes, and the fares can be about 20% less than the major carriers.
