Here are some of The Traveling Professor's favorite dining spots in Florence:

Trattoria la Casalinga:  Across the Arno, adjacent to the church of San Spirito, I have enjoyed many lunches here although it is perfect for dinner too. In terms of pastas, try the Pasta Bolognese and of course, they serve a fine ribollita.  Catch the coniglio al forno (baked rabbit) for a treat.

Mario:  Near the Mercato Centrale, this long-standing eating spot is special.  I like the communal tables and the simple and inexpensive, fresh fare.  Try the zuppa di fagioli (Tuscan bean soup) and tagliata di manzo al rosemarino (steak with rosemary).  It's an authentic Tuscan experience.

Gelato:  A constant argument among Florentines and travelers alike is "what is the best gelato spot?". Check out Gelateria Carapina.  It's a fruit-flavored-fantasia at this popular gelato spot.   However, you might want to wait until next month's blog post when I get back from a small group tour to Italy and Florence to give an updated report.
