There are many, many places to eat in Rome. Here are The Traveling Professor's favorites on our small group tours to Rome:
Ristorante all Rampa: Conveniently located adjacent to the Spanish Steps, it usually is not overwhelmed with crowds. I like the friendly service and the menu is typical of a Roman restaurant. If interested in fish, there is a nice selection here.
Risorante del Giglio: On our small group tours to Rome, we always enjoy the friendly service by the formal white-jacketed servers. The menu is typical of Roman restaurants with good pastas and a wonderful dessert cart. Diners feel like they have been brought back to the 1950's in this traditional dining spot. It is next to the Rome Opera house, so plan accordingly when the Opera is playing.
Target: An unusual name for an Italian restaurant, but our group was surprised by the good quality, excellent service, and the value. It is more on the modern side, but a good option for quality dining at a lower price. Try it!
Risorante Paris: Another unusual name for an Italian restaurant in Rome. Located in the Trestavere section of Rome, we love it for fresh vegetables and salads. We notice more locals than usual dining here.
