Icelandair: On Icelandair, all "roads" go through Reykjavik to places like London, Rome, Madrid, Barcelona, Oslo, Hamburg, Frankfurt and a lot of other places. Icelandair lets the traveler stop over in Reykjavik for up to 7 days. What I like about Icelandair is that they want your business. Their planes are comfortable and they don't rake the traveler over the coals when it comes to change fees and the like. Their fares are some of the best too.
Air Canada: With the decline in oil prices and the subsequent decline in the Canadian dollar, a flight going through Canada is going to be very economical. Air Canada travelers going to Europe via Toronto have the opportunity to stopover in Toronto (one of my favorite cities) for a week.
